The Joy of Baking

I think it is safe to say that I am addicted to baking. Pies, cakes, tarts, muffins, breads; pretty much anything. Seldom do I buy store bought cookies or cakes. I’d rather just bake it. For me not only is it rewarding to bake and share delicious treats with my family and friends, it’s a stress reliever. I know, for some of you that is probably hard to comprehend but for me its a way to channel and focus my creative energies. Oh and best of all, the aroma in my house is better than any fragrance candle I ever purchased!

Part of my baking addiction includes my love for reading cookbooks. I guess you can says its a hobby of some sorts. This past weekend I was browsing through some of my collection, looking for a recipe to bake an Easter dessert. I don’t know about you, but for me when I think of a spring holiday dessert my mind immediately jumps to sweet, soft, flaky, coconut.

I found a coconut cake recipe that I always wanted to try however I decided to use my bundt pan so I could fill the center with chocolate Easter eggs. It came out a bit dense and more like a pound cake texture but very flavorful. Great with a cup of tea. However next time, to get a fluffier cake texture, I will try 2 nine inch cake pans to make a traditional style cake. Don’t get discouraged when you see the recipe. It looks like a lot of work but it’s well worth it. If you prefer something tailored to your own taste and skill level, you can always browse our catalog or my reading list for some other fun ideas.
